BEETROOT, EDAMAME & GOATS CHEESE SALAD recipe

makes 2 portions 

I often find this salad especially timely when my body is tired, recovering after stress or just generally in need of a quick and wholesome pick me up. This particular combination of beetroot and green leaves rich in minerals, edamame beans rich in easy digestible protein, goats cheese and avocado rich in good nourishing fats. It all comes together really beautifully. 

Ingredients:

  • 1 small head lettuce, broken into rough chunks
  • 1 avocado, sliced the way you like
  • 1 cup edamame beans cooked (they are all sold cooked, so you just need to defrost them in boiling water for 2 mins)
  • 2 medium sized beetroots, sliced into discs
  • 4 Tbsp soft goats cheese (feta will do too, but goats cheese tastes better)
  • 2 Tbsp olive oil + juice of 1 lemon + pinch of sea salt for dressing

Method:

  1. Arrange all salad ingredients on a plate
  2. Drizzle with dressing liberally
  3. Enjoy right away!
