CAULIFLOWER CARPACCIO

Hard to imagine anything more gut loving than this carpaccio. All brassicas in general are incredibly beneficial for our hormone detoxification, metabolism and gut health. This recipe has got plenty of lemon juice & black pepper in it, which really helps with digestion of raw cauliflower. If however you know that raw cabbages are not your thing – start with a small portion, see how it feels. And if you can become friends – amazing. If not – I hope there were other salads in this book you found delicious, digestible and inspiring.
Ingredients:
- head cauliflower (go for the best quality you can find, ideally organic and very fresh)
- 2 unwaxed lemons
- pinch of sea salt and black pepper
- 2 Tbsp olive oil
Method:
- Slice cauliflower into layers as thin as you can manage (mandoline would come handy here)
- Peel 1 lemon and slice all the peel thinly too. Off it goes on top of cauliflower
- Juice both lemons
- Dress everything with salt, black pepper, lemon juice and olive oil
