CHICKEN SATAY SALAD

Ingredients:
- 2 cooked chicken breasts, pulled into chunks
- 1 cup red cabbage, thinly sliced
- 1 cup red pepper, thinly sliced
- 1 cup carrots, thinly sliced
- 1 cup cucumber, sliced into circles
- 1 ripe papaya (size of a mango) - roughly chopped
- ½ cup spring onions, thinly sliced
- fresh coriander, toasted peanuts and sesame seeds to finish (optional)
Dressing
- 2 Tbsp crunchy peanut butter
- 3 Tbsp sesame oil
- 3 Tbsp soy sauce
- 1 tsp honey or coconut blossom nectar
- sea salt
- 2 cloves garlic – thinly grated/crushed
- juice and zest of 1 lime
Method:
- Bring the dressing ingredients together, set aside.
- Mix all of the salad ingredients including the dressing together in a large bowl.
- Top up with (optional) fresh coriander, sesame seeds, toasted peanuts, serve straight away.
