CHICKEN SATAY SALAD recipe

makes 3 - 4 portions 

Ingredients: 

  • 2 cooked chicken breasts, pulled into chunks
  • 1 cup red cabbage, thinly sliced
  • 1 cup red pepper, thinly sliced
  • 1 cup carrots, thinly sliced
  • 1 cup cucumber, sliced into circles
  • 1 ripe papaya (size of a mango) - roughly chopped
  • ½ cup spring onions, thinly sliced
  • fresh coriander, toasted peanuts and sesame seeds to finish (optional)

Dressing

  • 2 Tbsp crunchy peanut butter
  • 3 Tbsp sesame oil
  • 3 Tbsp soy sauce
  • 1 tsp honey or coconut blossom nectar
  • sea salt
  • 2 cloves garlic – thinly grated/crushed
  • juice and zest of 1 lime

Method:

  1. Bring the dressing ingredients together, set aside.
  2. Mix all of the salad ingredients including the dressing together in a large bowl.
  3. Top up with (optional) fresh coriander, sesame seeds, toasted peanuts, serve straight away.
