GREEN PEA SOUP recipe

makes 3 portion

This is a very quick and simple soup with only a small handful of ingredients. It’s wonderful on its own for those days when you are less hungry. And if you are arriving at a mealtime with a good healthy appetite, you might want to top this one up with some seeds you like, cubes of avocado, some extra olive oil, or even some hard boiled egg or shredded chicken.

Ingredients:

  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 1 large potato (or 2 smaller ones)
  • 450 gr garden peas, frozen
  • 3 cups vegetable broth
  • a couple of sprigs (or 1/3 teaspoon if dry) of thyme
  • a small handful of fresh mint leaves
  • Juice of half a lemon

Method:

  1. In a pot, heat a tablespoon of olive oil, then add the onion and gently fry until translucent, stirring occasionally. Stir in the minced garlic, thyme, then add the diced potatoes and peas. Pour over with vegetable stock, and season with salt and pepper.
  2. Let it cook on low for about 15 minutes, until the potatoes and peas are fork-tender. Then, remove from heat, add a tablespoon of lemon juice, fresh mint leaves and blend until smooth. Enjoy!
