LEMON, THYME, HONEY & ALMOND CAKE recipe

makes 1 loaf tin 

Ingredients:

  • 360g ground almonds
  • 1 tsp baking powder
  • 5 eggs
  • 150g honey
  • 60 ml extra virgin olive oil
  • juice of 2 lemons (60ml to be precise)
  • zest of 2 lemons
  • small handful of fresh lemon thyme leaves (or just thyme)

Method:

  1. Just bring all ingredients together, making sure it is all mixed evenly (for that you might want to mix all wet ingredients first).
  2. Transfer to a lined tin (either loaf or 20 cm round one).
  3. Send it into a preheated to 160C/fan oven for 45 minutes.
  4. Cool down for 10 mins and enjoy.

    The lemon thyme and lemon zest flavour develops even better overnight, using good flavoursome honey also pays off in the final result.
