LENTIL & CHICKEN SALAD recipe

makes 2-3 portions

What makes a plate of food a gut friendly one? Many things. For example, the variety of fibres (we’ve got 12 different types of plants in this salad, which is excellent). Also ingredients like good quality protein and fats that keep your blood sugar stable, so you have plenty of energy to go between meals without snacking. 

Ingredients:

  • 3 cups mixed greens (I took a bag of M&S mixed greens with shredded beetroot)
  • ½ tin cooked green lentils (rinsed & drained)
  • ½ cup thinly sliced green onions
  • ½ roasted chicken breast, cubed
  • 1 cup grated carrots
  • 1 medium avocado, cubed
  • 1 sweet & ripe nectarine (if in season) or mandarin, cubed
  • handful of pumpkin seeds

Dressing (just mix together)

  • 2 Tbsp olive oil
  • 4 Tbsp kimchi juice (can be easily swapped for lemon/lime juice)
  • 1 tsp Dijon mustard
  • drop (literally) honey
  • generous pinch of sea salt (because life’s too short to eat under seasoned food!)

Method:

Mix everything together, enjoy right away!
