OATY BERRY SQUARES

Breakfast meets dessert meets comfort food in this recipe. High in protein, fibre and just very delicious all round.
Ingredients:
- 200g oats
- 60g sesame (or any other seeds you like)
- 50g buckwheat (or almond) flour
- 1 tsp baking soda
- tiny pinch of sea salt
- 50g maple syrup (or honey)
- 2 eggs
- 75g coconut oil
Method:
- Preheat oven to 180C.
- Mix everything together in a bowl.
- Line your loaf tin (mine was fairly large) with parchment paper
- Take ⅔ of your oat mix and arrange evenly in a tin, lightly pressing together (but not too much, we are not in a brick making business here).
- Top up with approx. 200g of mixed frozen berries.
- Scatter remaining oat mix on top.
- Bake for 20-23 minutes, you want it baked through but not dried out.
- Enjoy straight out of the oven.
