PAPAYA & LIME SLAW recipe

makes 3 - 4 portions

I keep this salad for those times when occasional overindulgence might be somewhat natural, inevitable even. When we go a bit higher on all things processed and saturated, putting some extra pressure on our digestion and gut. So this salad is literally a breath of fresh air for your whole system. Tons of easily digestible fibre and vitamin C too, to keep your body systems alive and in tune. You can play with ingredients all you like, though I find this particular combination really very delicious.

Ingredients:

  • ⅓ purple cabbage, thinly sliced
  • ½ ripe medium papaya, cubed
  • 1 cup cooked edamame beans (sold in supermarket freezers or meals on the go)
  • small bunch spring onions, thinly sliced
  • small bunch parsley, finely sliced
  • 1 handful pumpkin seeds
  • 1 handful sesame seeds
  • ⅓ medium hot chilli, thinly sliced
  • juice of 2 limes
  • 3 Tbsp extra virgin olive oil
  • pinch of salt 
  • pinch of ground black pepper

Method:

It’s literally just bringing everything together and enjoying straight away.
