TURKEY STIR FRY

Ingredients:
- 250gr turkey mince
- 3 cloves of garlic, minced
- 2 Tbsp fresh grated ginger
- 1 red pepper, thinly sliced
- 1 medium onion, thinly sliced
- ½ cup frozen green peas
- ½ cup frozen sweet corn
- 1 handful frozen green beans
- 8 Tbsp tamari (gluten free soy) sauce
- 4 Tbsp coconut oil/olive oil for frying
- 2 Tbsp sesame seeds (to sprinkle, optional)
- pinch of sea salt
- pinch of chilli flakes
- pinch of five spice
- 1 cup cooked brown rice/quinoa/buckwheat to serve with
Method:
- Heat a large skillet over medium heat. Once hot, add coconut oil, onions, garlic, ginger, five spice and chilli flakes, and cook for a couple of minutes till it cooks through, then add turkey mince and a pinch of salt and pepper. Cook for about five minutes, stirring.
- Add the peppers, beans, peas & sweetcorn, and continue to stir and cook for another couple of minutes till frozen veg gets defrosted, but peppers are still crunchy. Stir in tamari sauce. Top with a sprinkle of sesame seeds.
